Tequila-Lime Marinade

It’s grilling season. I always like to find different marinades to shake things up a bit.  Here’s a good one I want to share, mostly because I like this stock photo of the limes.

Tequila-Lime Marinade

 2 T grated lime peel
1/2 cup lime juice
1/2 cup tequila
1/2 cup olive oil
2 T chopped cilantro
1/2 tsp sugar
1/2 tsp coarse salt
1 garlic clove, chopped
1 jalapeño pepper, chopped
Mix all ingredients in a shallow glass or plastic dish or a plastic resealable bag. Add 1 1/2 pounds of boneless chicken, pork, fish or seafood; turn to coat with marinade. Cover dish or seal bag and refrigerate at least 30 minutes, but no more than 4 hours. Remove meat; discard leftover marinade. Grill meat as desired.
